Abstract
The growth of the culinary industry in Indonesia increasingly demands halal
assurance that covers not only raw materials but also the entire production process.
This study aims to analyze the effect of halal supply chain integration on quality
performance, with halal production practices as a mediating variable, among
culinary SMEs in Pasar Gede Solo. This research is motivated by the rising
awareness among Muslim consumers about the importance of halal integrity and
the challenges faced by SMEs in implementing comprehensive halal assurance
systems. A descriptive quantitative approach was employed, using a survey method.
Data were collected through questionnaires distributed to 52 culinary SME
respondents who had been operating for more than one year and understood the
concept of halal production. The data were analyzed using the PLS-SEM method.
The results indicate that halal supply chain integration does not have a significant
effect on quality performance, either directly or through the mediation of halal
production practices. Halal production practices were also not proven to
significantly mediate the relationship between halal supply chain integration and
quality performance. This study contributes theoretically to the literature on halal
supply chains and provides practical recommendations for culinary SMEs and
policymakers in developing integrated production systems that align with sharia
principles.
