ABSTRAK
Kualitas gula jawa dipengaruhi oleh proses penyadapan nira, kualitas nira,
proses pembuatan dan cara penyimpanan. Dalam proses pembuatan gula jawa
sering terjadi kendala seperti sulitnya proses kristalisasi. Kesulitan proses
kristalisasi ini disebabkan oleh kualitas nira yang kurang baik. Berdasarkan
pengamatan diketahui bahwa penyebab menurunnya kualitas nira yaitu kurang
memadainya wadah penampung nira. Wadah penampung atau bumbung terbuat
dari bambu dan tali yang seadanya. Penggunaan bumbung yang sederhana ini
dapat mengakibatkan nira tercampur dengan air hujan, kotoran, serangga dan zat
lainnya. Nira yang bercampur dengan air dapat menurunkan kadar sukrosa karena
kandungan air lebih banyak daripada kandungan sukrosa sehingga nira sulit
mencapai proses kristalisasi. Berdasarkan pengujian kadar sukrosa, nira yang
dihasilkan hanya mengandung 4,45% sukrosa dimana Standar Nasional Indonesia
(SNI) sebesar 12,30% - 17,40% sehingga perlu adanya perbaikan rancangan
wadah penampung nira yang dapat menjaga kualitas nira.
Perbaikan rancangan wadah penampung nira pada penelitian ini
diselesaikan dengan metode Quality Function Deployment (QFD) dan Value
Engineering. Data yang digunakan didapatkan dari wawancara, pengamatan, dan
penyebaran kuesioner yaitu kuesioner terbuka dan tertutup. Data yang didapatkan
dari kuesioner kemudian dilakukan proses uji validitas dan reabilitas. Data yang
didapatkan dari kuesioner tertutup kemudian diolah menggunakan metode Quality
Function Deployment (QFD) dan Value Engineering sehingga menghasilkan
rancangan wadah penampung nira yang sesuai dengan kebutuhan konsumen.
Hasil penelitian menunjukkan bahwa nira yang dihasilkan dari wadah
penampung nira setelah perbaikan mengalami peningkatan kualitas yaitu sebesar
10,12%. Nira yang dihasilkan dari wadah penampung nira memiliki ketahanan
yang lebih lama terhadap perubahan dan proses kristalisasi mejadi lebih singkat
yang mana sebelum perbaikan selama 4 jam untuk 8 liter sedangkan setelah
perbaikan hanya memakan waktu 2,667 jam untuk 8 liter. Hasil penelitian
menunjukkan bahwa adanya perbaikan terhadap wadah penampung nira dapat
menjaga kualitas nira dengan baik.

ABSTRACT
The quality of palm sugar is influenced by the sap tapping process, the
quality of the sap, the manufacturing process and the method of storage. In the
process of making palm sugar, problems often occur, such as the difficulty of the
crystallization process. The difficulty of the crystallization process is caused by
the poor quality of the sap. After observations, it was found that the cause of the
decline in the quality of the sap was the inadequate container for the sap. The
holding container or roof is made of bamboo and a makeshift rope. Using this
simple roof can result in the sap being mixed with rainwater, dirt, insects and
other substances. Nira mixed with water can reduce the sucrose content because
the water content is more than the sucrose content so that the sap is difficult to
reach the crystallization process. Based on testing for sucrose content, the sap
produced only contained 4.45% sucrose where the Indonesian National Standard
(SNI) was 12.30% - 17.40%. Therefore, it is necessary to improve the design of
the sap container that can maintain the quality of the sap.
Improvements to the design of the sap container in this study were
completed by the methodQuality Function Deployment (QFD) andValue
Engineering. The data used were obtained from interviews, observations, and
distributing questionnaires, namely open and closed questionnaires. The data
obtained from the questionnaire was then tested for validity and reliability. Data
obtained from closed questionnaires were then processed using the
methodQuality Function Deployment (QFD) andValue Engineering so as to
produce the design of the container for the sap container according to consumer
needs.
The results showed that the sap produced from the sap container after
repair experienced an increase in quality, namely 10.12%. The sap produced from
the sap container has a longer resistance to change and the crystallization
process becomes shorter which is 4 hours before repair for 8 liters while after
repair it only takes 2.667 hours for 8 liters. The results of the study showed that
improvements to the sap container could maintain the quality of the sap well.
