Abstract
This research’s objectives are : (1) To analyze added value resulting from purple potato processing into egg roll on agroindustry purple potatoes egg roll "Shasa" in Pleret Subdistrict, Bantul Regency. (2) To analyze the business risks on agroindustry purple potato egg roll "Shasa" Pleret Subdistrict, Bantul Regency. Method of determining the area of research used in this study is a case study conducted on agroindustry purple potato egg roll "Shasa" in District Pleret Subdistrict, Bantul Regency. The first hypothesis testing, that is added value resulting from purple potatoes processing into egg roll on agroindustry purple potatoes egg roll "Shasa" in Pleret Subdistrict, Bantul Regency still low. The second hypothesis testing, that is agroindustry purple potatoes egg roll "Shasa" in the Pleret Subdistrict, Bantul Regency have a low risk. The results of value added from purple potatoes processing into egg roll on agroindustry purple potatoes egg roll "Shasa" is Rp 47665.12/ kg with an added value of the ratio of 45.18%. This means, that for every 1 kg of purple potato after a production process capable of providing added value of Rp 47665.12. The results of the study showed that the value of the coefficient of variation is 0,33 or (CV < 0,5) and lower limit profits of agroindustry purple potato egg roll "Shasa" is Rp 13.958.689,25` or positive (L > 0), it can be stated that the agroindustry purple potato egg roll "Shasa" have a low risk.
