Abstract

Tubers contain a good nutrition for substituting rice as a main food. A kind of the tubers is 'ubi ungu' (purple sweet potato) which contain much prebiotic fiber and antioxidant The specificity of 'ubi ungu' is on the high fiber content that good for preventing cancer and binding the carcinogen. Various manufacturing product can be produce from 'ubi ungu' i.e: milk, yup, ice cream, chips, biscuit, cake and flour. The purple color o ftuber shows that the tuber containing more beta caroten than the other tuber i.e. 9900 mkg per 100g materials but wrong process can be decreasing the beta caroten level. Based on the utility, ubi ungu has great potency to be developed as food manufacturing product in industrial scale.
