Abstract
ABSTRAK
Persaingan dalam dunia industri sangat kuat, salah satunya industri
makanan. Tifa Roti merupakan perusahaan yang memproduksi roti.Tifa Roti
dituntut untuk memproduksi roti dengan cepat, murah, dan kualitas yang tetap
terjamin untuk mempertahankan pelanggannya agar dapat terus bersaing. Untuk
selalu memenuhi permintaan dari konsumen tentunya Tifa Roti akan bekerjasama
dengan pihak lain antara lain supplier bahan baku yaitu Purnomo Distributor dan
pedagang roti. Ketiga pihak ini tentunya harus menjaga koordinasi dan kerjasama
dalam proses supply chain. Agar proses supply chain tersebut berjalan dengan
lancar tanpa terjadi konflik yang merugikan satu sama lain maka diperlukan
kebijakan integrasi supply chain.
Produk yang dihasilkan Tifa Roti termasuk produk yang mengalami
kemunduran secara kualitas dengan cepat yaitu selama 7 hari, oleh karena itu
aktor yang berpengaruh terhadap habisnya persediaan tidak hanya karena ada
permintaan tetapi juga di sebabkan karena adanya kerusakan. Tifa Roti harus
mempunyai suatu kebijakan pengiriman untuk mendukung pengelolaan
persediaan. Dengan menggunakan model yang telah dikembangkan oleh Hsin
Rau, dkk yaitu model yang menggabungkan tiga konsep, meliputi model
persediaan deteriorating items, sistem persediaan multi eselon, dan integrasi
supply chain maka diperoleh usulan kebijakan pengiriman.
Dengan menggunakan model integrasi tersebut didapatkan hasil frekuensi
pengiriman roti dari Tifa Roti ke pedagang adalah 26 kali pengiriman selama satu
bulan dengan jumlah pengiriman 2679 unit / hari. Kebijakan pengiriman tersebut
memberikan keuntungan yaitu jumlah retur roti karena rusak berkurang dari 31%
menjadi 3,8%.

ABSTRACT
Competition in the industry is very strong, one of the food industry. Tifa
Roti’s is a bakery company that produces. Tifa Roti’s required to produce bread
with a quick, cheap, and quality is still guaranteed to retain its customers in order
to continue to compete. To always meet the demands of consumers would
Tifa Roti’s will cooperate with other parties such as suppliers of raw materials,
that is Purnomo Distributor and trader of bread. The third party would have to
maintain coordination and cooperation in the supply chain process. In order for
the supply chain process is running smoothly without any adverse conflict with
each other it is necessary to supply chain integration policy.
The resulting products include products Tifa Roti’s decline in quality with
quick during the 7 days, therefore the factors that affect the ending
inventory is not only because there is demand but also because of the
damage caused. Tifa Roti’s should have a policy to support the delivery of
inventory management. By using a model that has been developed by Hsin
Rau, et al is a model which incorporates three concepts, models include
deteriorating inventory items, multi-echelon inventory systems, and supply
chain integration of the obtained delivery policy proposals.
By using the integration model showed the Shiping frequency of the bread
from Tifa Roti to retaileris 26 times during the month by the numberof deliveries
in 2679 units / day. The delivery policy gives the advantage that the
number of returns because of broken bread was reduced from 31% to 3.8%.
